Peach Butter for Mom

Well, another year has passed and once again, the month of May has snuck up on all of us. While some may have the Nobel prize of gifts ready for Mom each Mother’s Day, many of us struggle to come up with a loving, valuable, yet creative gift. If your mind goes straight to flowers, we recommend taking our advice and switching it up (or at least adding a new twist to the flower gesture). We have the perfect solution to your gift dilemma. Straight from Executive Chef Jeffrey Jake’s kitchen, here’s a charming gift idea for a person who deserves your thoughtfulness on this special day:

Peach Butter:

Yield: 4 Cups

5 Pounds Local Peaches
1.5 Cups Sugar
2 Teaspoon Freshly Squeezed Meyer Lemon Juice
Pinch of Salt

Preheat Oven to 300 Degrees.

Cut peach in half and remove the pit. Puree them through a food mill or pulse on food processor until smooth. You should have about two quarts. Place in a thick bottom non-aluminum pan and stir in sugar, Meyer lemon juice and salt.
Bake the puree for 2.5 hours, stirring every half hour. Transfer the peach butter to a smaller clean pot and bake another two hours.

Let the butter cool and serve Mom some on her morning pancakes or better yet, vanilla ice cream. Your Mom’s Day gift can last, covered, for a few months under refrigeration and each morning she opens the refrigerator she’ll smile at the thought of her Mother’s Day very special treat.
